IIPA glazed christmas ham by jake kellie

It's that time of the year again where we all stuff ourselves silly with ham and beer! Your Grandma might do an alright ham, but you ain't seen nothing yet...

Jake Kellie experimented with a can of IIPA and a succulent leg of premium Boston Bay Smallgoods ham, then left it in the staff kitchen. Dangerous! It didn't last more than half an hour as the smokey smell wafted around the brewery. It's juicy and sweet, and perfectly paired with a fresh IIPA!

Merry Christmas you cheeky human. 

Ingredients

200g Honey
100g Mustard 
100g Brown Sugar 
IIPA Pirate Life Beer (Seasoning)
Medium Boston Bay Smallgoods Ham

Method:

Glaze:
Combine the honey, mustard and brown sugar in a saucepan.
Bring to a boil over medium heat. 
Remove from heat and season with IIPA.
Allow to cool.

Ham:
Roast at a low temperature until the core reaches 56∞C.
Remove the skin at around 48c, score and generously apply the glaze.
Return the ham to the oven and colour well and till temperature is reached. 
Allow to rest before carving!

Enjoy with a fresh IIPA.
